- πΉ For the Base:
- 250 g digestive biscuits or graham crackers
- 100 g unsalted butter melted
- πΉ For the Cheesecake Filling:
- 500 g full-fat cream cheese cold
- 100 g icing sugar powdered sugar
- 1 tsp vanilla extract
- 300 ml double cream cold
- 150 g crushed Maltesers
- πΉ Optional Chocolate Ganache Topping:
- 100 g milk or dark chocolate
- 100 ml double cream
- Whole Maltesers for garnish
Make the Base:
Crush the biscuits in a food processor or ziplock bag with a rolling pin.
Mix the crumbs with melted butter until combined.
Press firmly into the bottom of a springform pan.
Chill in the fridge for 20 minutes.
Prepare the Filling:
Beat the cream cheese, icing sugar, and vanilla extract until smooth.
In another bowl, whip the cream to stiff peaks.
Gently fold the whipped cream into the cream cheese mixture.
Fold in the crushed Maltesers.
Assemble the Cheesecake:
Spoon the filling over the chilled base and smooth the top.
Chill for at least 6 hours, preferably overnight.
Add Ganache & Decorate (Optional):
Melt chocolate and cream together until smooth. Let cool for 5 minutes.
Pour over the cheesecake and top with whole Maltesers.
Serve:
Remove from the tin and slice with a hot knife for clean cuts.
