🍰 Malteser Cheesecake – No-Bake Dessert Recipe

  • Food processor or rolling pin + ziplock bag

Ingredients
  

  • πŸ”Ή For the Base:
  • 250 g digestive biscuits or graham crackers
  • 100 g unsalted butter melted
  • πŸ”Ή For the Cheesecake Filling:
  • 500 g full-fat cream cheese cold
  • 100 g icing sugar powdered sugar
  • 1 tsp vanilla extract
  • 300 ml double cream cold
  • 150 g crushed Maltesers
  • πŸ”Ή Optional Chocolate Ganache Topping:
  • 100 g milk or dark chocolate
  • 100 ml double cream
  • Whole Maltesers for garnish

Instructions
 

  • Make the Base:
  • Crush the biscuits in a food processor or ziplock bag with a rolling pin.
  • Mix the crumbs with melted butter until combined.
  • Press firmly into the bottom of a springform pan.
  • Chill in the fridge for 20 minutes.
  • Prepare the Filling:
  • Beat the cream cheese, icing sugar, and vanilla extract until smooth.
  • In another bowl, whip the cream to stiff peaks.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Fold in the crushed Maltesers.
  • Assemble the Cheesecake:
  • Spoon the filling over the chilled base and smooth the top.
  • Chill for at least 6 hours, preferably overnight.
  • Add Ganache & Decorate (Optional):
  • Melt chocolate and cream together until smooth. Let cool for 5 minutes.
  • Pour over the cheesecake and top with whole Maltesers.
  • Serve:
  • Remove from the tin and slice with a hot knife for clean cuts.

Notes

Always use cold ingredients for no-bake cheesecakes to ensure proper setting.
To make a gluten-free version, use GF cookies and check chocolate labeling.
Add a teaspoon of malt powder for an extra boost of flavor in the filling.
