Instructions
 

  • Step 1: Prepare the Chicken
  • 1️⃣ Preheat your grill or oven to 375°F (190°C).
  • 2️⃣ Pound the chicken breasts to an even ¾ to 1-inch thickness for even cooking.
  • 3️⃣ Brush both sides of the chicken with olive oil, then season with salt, black pepper, Italian seasoning, and garlic powder.
  • Step 2: Cook the Chicken
  • 🔹 Grilling Method:
  • 1️⃣ Heat the grill to medium-high heat (375-400°F / 190-205°C) and lightly oil the grates.
  • 2️⃣ Grill the chicken for 5-6 minutes per side until it reaches an internal temperature of 165°F (75°C).
  • 3️⃣ In the last 2 minutes, add mozzarella cheese on top and cover the grill to let it melt.
  • 🔹 Baking Method:
  • 1️⃣ Place the seasoned chicken in a greased baking dish.
  • 2️⃣ Bake at 400°F (200°C) for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  • 3️⃣ Add mozzarella cheese during the last 5 minutes of baking.
  • Step 3: Prepare the Bruschetta Topping
  • 1️⃣ While the chicken is cooking, mix the diced tomatoes, fresh basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper in a bowl.
  • 2️⃣ Let it sit for 10-15 minutes to allow the flavors to blend.
  • Step 4: Assemble the Bruschetta Chicken
  • 1️⃣ Spoon the bruschetta mixture over the cooked chicken.
  • 2️⃣ Drizzle with balsamic glaze and garnish with fresh basil.
