Cheesy Chicken Taco Casserole – Easy & Flavorful One-Pan Meal

This chicken taco casserole is a perfect weeknight dinner packed with Tex-Mex flavors! It’s made with shredded chicken, taco seasoning, black beans, corn, cheese, and crispy tortilla chips, all baked together in a creamy, cheesy, and satisfying dish. Ingredients
  

  • For the Casserole:
  • 3 cups cooked shredded chicken rotisserie works great
  • 1 packet 1 oz taco seasoning
  • 1/2 cup salsa mild or spicy
  • 1/2 cup sour cream
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies (Rotel)
  • 1/2 cup cream cheese softened
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 2 cups crushed tortilla chips
  • For Garnishing:
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream for serving
  • 1 avocado sliced
  • 1 jalapeño sliced (optional)

Instructions
 

  • 1️⃣ Prepare the Chicken Mixture
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix shredded chicken, taco seasoning, salsa, sour cream, and softened cream cheese until well combined.
  • 2️⃣ Layer the Casserole
  • Grease a 9x13-inch baking dish.
  • Spread half of the crushed tortilla chips at the bottom.
  • Layer half of the chicken mixture over the chips.
  • Add half of the black beans, corn, and diced tomatoes.
  • Sprinkle 1 cup of cheddar and 1 cup of Monterey Jack cheese on top.
  • Repeat the layers: tortilla chips, chicken mixture, beans, corn, tomatoes, and cheese.
  • 3️⃣ Bake the Casserole
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake uncovered for another 10 minutes until the cheese is bubbly and golden.
  • Let it rest for 5 minutes before serving.
  • 4️⃣ Serve & Garnish
  • Top with fresh cilantro, sour cream, avocado slices, and jalapeños.
  • Serve warm and enjoy!

Notes

Make it Spicier: Add diced jalapeños or use hot salsa.
Make it Healthier: Swap tortilla chips for baked tortillas or reduce cheese.
