  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs separated
  • cups 420ml milk or buttermilk
  • ½ cup 115g melted butter
  • 1 tsp vanilla extract

  • How to Make Crêpes:
  • Prepare the Batter
  • In a mixing bowl, whisk together flour, sugar, and salt.
  • In another bowl, beat the eggs, then slowly add milk, water, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry, whisking until smooth. (For extra smooth batter, blend in a blender for 10 seconds.)
  • Let the batter rest for 30 minutes to ensure a tender texture.
  • Cook the Crêpes
  • Heat a non-stick pan over medium heat and lightly grease with butter.
  • Pour ¼ cup of batter into the pan, tilting it to spread evenly.
  • Cook for 1-2 minutes until edges lift, then flip and cook for another 30 seconds.
  • Stack on a plate and cover with a towel to keep warm.
  • Serve
