  • For the Crepes:
  • 2 cups 250g all-purpose flour
  • 3 large eggs
  • 2 cups 480ml whole milk
  • ½ cup 120ml water
  • 3 tbsp unsalted butter melted
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • For the Cream Filling:
  • 2 cups 480ml heavy whipping cream
  • ¼ cup 30g powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Step 1: Prepare the Crepe Batter
  • 1️⃣ In a large mixing bowl, whisk together the eggs, milk, water, and vanilla extract.
  • 2️⃣ Gradually sift in the flour, sugar, and salt while whisking continuously until smooth.
  • 3️⃣ Stir in the melted butter and mix well. The batter should be thin and smooth.
  • 4️⃣ Cover and let the batter rest for 30 minutes (this helps create tender crepes).
  • Step 2: Cook the Crepes
  • 1️⃣ Heat a non-stick pan over medium heat and lightly grease with butter.
  • 2️⃣ Pour ¼ cup of batter into the pan, swirling it to create a thin layer.
  • 3️⃣ Cook for 1 minute, then flip and cook for another 30 seconds until golden.
  • 4️⃣ Transfer to a plate and repeat until all batter is used, stacking crepes with parchment paper in between.
  • Step 3: Make the Cream Filling
  • 1️⃣ In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Step 4: Assemble the Crepe Cake
  • 1️⃣ Place one crepe on a cake stand or flat plate.
  • 2️⃣ Spread a thin layer of whipped cream evenly over the crepe.
  • 3️⃣ Repeat the process, stacking crepes and cream until all are used.
  • 4️⃣ Chill the cake in the refrigerator for at least 1 hour to set.
  • Step 5: Decorate & Serve
  • 1️⃣ Dust with powdered sugar, drizzle with chocolate or caramel, and top with fresh fruit.
