Ingredients

  • 2 lbs 900g chicken wings (split into drumettes and flats)
  • 1 tbsp baking powder NOT baking soda – for crispiness
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper optional for heat
  • For Serving:
  • 1/2 cup buffalo sauce optional
  • 1/2 cup ranch or blue cheese dressing
  • Celery sticks for garnish
  • Fresh parsley for garnish

Instructions
 

  • 1️⃣ Prep the Wings
  • Preheat oven to 425°F (220°C).
  • Pat the chicken wings dry with paper towels to remove excess moisture (this helps with crispiness).
  • In a large bowl, toss the wings with baking powder, salt, black pepper, garlic powder, smoked paprika, onion powder, and cayenne pepper. Ensure the wings are evenly coated.
  • 2️⃣ Arrange for Baking
  • Line a baking sheet with parchment paper or aluminum foil.
  • Place a wire rack on top of the baking sheet and lightly grease it (this allows air to circulate around the wings for even crisping).
  • Arrange the wings in a single layer on the wire rack, ensuring they are not touching.
  • 3️⃣ Bake to Perfection
  • Bake the wings for 40-45 minutes, flipping halfway through at the 20-minute mark.
  • Continue baking until golden brown and crispy.
  • 4️⃣ Toss in Sauce & Serve
  • If desired, toss the wings in buffalo sauce or any other sauce of choice.
  • Garnish with fresh parsley and serve with ranch or blue cheese dressing and celery sticks.

Notes
