Ingredients
  

  • Main Ingredients:
  • 1 bag 32 oz frozen tater tots
  • 1 lb 450g breakfast sausage (or bacon, ham, or turkey sausage)
  • 8 large eggs
  • 1 cup milk whole or 2%
  • 2 cups shredded cheddar cheese divided
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika optional, for a smoky flavor
  • Optional Ingredients:
  • 1 small onion diced
  • 1 red bell pepper diced
  • ½ teaspoon red pepper flakes for spice
  • Chopped green onions for garnish

Instructions
 

  • Step 1: Preheat the Oven
  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  • Step 2: Cook the Sausage & Vegetables
  • Heat a skillet over medium heat.
  • Add the breakfast sausage and cook until browned, breaking it apart with a spatula.
  • If using, sauté the diced onion and bell pepper in the same pan for 2-3 minutes.
  • Drain excess grease and set aside.
  • Step 3: Prepare the Egg Mixture
  • In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and paprika.
  • Stir in 1 cup of shredded cheese (reserve the other cup for topping).
  • Step 4: Assemble the Bake
  • Spread the cooked sausage mixture evenly in the baking dish.
  • Pour the egg mixture over the sausage.
  • Arrange the frozen tater tots on top in a single layer.
  • Step 5: Bake the Casserole
  • Bake for 35-40 minutes or until the eggs are set and the tater tots are golden brown.
  • Sprinkle the remaining 1 cup of cheese over the top and bake for 5 more minutes, until melted.
  • Step 6: Cool & Serve
  • Let the casserole cool for 5 minutes before slicing.
  • Garnish with chopped green onions and serve with sour cream or salsa.
