  • 1 bag 32 oz frozen tater tots
  • 1 lb breakfast sausage or bacon, diced
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese plus extra for topping
  • ½ cup shredded mozzarella cheese
  • Seasonings:
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika optional
  • Optional Add-ins:
  • ¼ cup diced green onions for garnish
  • ½ cup diced bell peppers
  • ½ cup mushrooms
  • ¼ teaspoon red pepper flakes for spice

Instructions
 

  • Step 1: Preheat the Oven & Prepare the Dish
  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish with butter or non-stick cooking spray.
  • Step 2: Cook the Sausage (or Bacon)
  • Heat a large skillet over medium heat.
  • Add breakfast sausage and cook until browned, breaking it up with a spatula. (If using bacon, cook until crispy and chop into pieces.)
  • Drain excess grease and set aside.
  • Step 3: Prepare the Egg Mixture
  • In a large mixing bowl, whisk together:
  • ✔ 8 eggs
  • ✔ 1 cup milk
  • ✔ Salt, pepper, garlic powder, onion powder, and paprika
  • Mix until well combined.
  • Step 4: Assemble the Casserole
  • Layer 1: Spread the cooked sausage or bacon evenly in the baking dish.
  • Layer 2: Sprinkle cheddar and mozzarella cheese over the meat.
  • Layer 3: Arrange frozen tater tots in a single layer on top.
  • Layer 4: Pour the egg mixture evenly over the casserole.
  • Step 5: Bake the Casserole
  • Place the dish in the preheated oven and bake uncovered for 40-45 minutes, or until the eggs are set and the tater tots are golden brown.
  • Step 6: Add Extra Cheese & Finish Baking
  • Sprinkle ½ cup of shredded cheese on top.
  • Bake for 5 more minutes, or until the cheese is melted.
  • Step 7: Cool & Serve
  • Remove from the oven and let the casserole sit for 5-10 minutes before slicing.
  • Garnish with chopped green onions or fresh parsley.
  • Serve warm and enjoy!
